Soaking, floaters, the second harvest, “are they just garnish?” — the real answers to the things that trip up first-time pea shoot growers.
Pea shoots are the most generous, forgiving thing in the Level 1 lineup — but they introduce one genuinely new step (the soak) and a couple of harmless surprises that make beginners second-guess themselves. Here’s what’s real and what isn’t.
Myth 1: “Soaking the seeds is optional”
For pea shoots, it isn’t — and it’s the one new skill this volume teaches. Pea seeds are large and hard, and an overnight soak (8–12 hours) wakes them up, kicks off germination, and dramatically improves how evenly the tray comes up. Skip it and you get patchy, slow growth. Do it and you get the biggest harvest on your windowsill. It’s five minutes of effort the night before for the best yield in home growing.
Myth 2: “Floating seeds are dead seeds”
During the soak, some peas float and some sink, and beginners assume the floaters are duds. Often they’re just holding an air pocket. Don’t bin the floaters wholesale — most will still sprout fine once sown. (The guide tells you which ones genuinely aren’t viable.)
Myth 3: “A bad smell during soaking means failure”
A faint starchy, beany smell from the soak water is normal. A genuinely foul, rotten smell means the soak ran too long or too warm — fixable by rinsing well, sowing, and shortening the soak next time. One smelly soak doesn’t ruin the grow; it’s a signal, not a verdict.
Myth 4: “You only get one harvest”
This is the happiest myth to bust. If you cut high — above the lowest leaf node rather than at soil level — many pea shoot trays push out a second harvest at roughly 60% of the first, for free, with no extra seed or soil. One tray, two cuts. The technique is simple and the guide shows you exactly where to put the scissors.
Myth 5: “Pea shoots are just garnish”
Calorie-light, yes; nutritionally trivial, no. Pea microgreens led a ten-variety antioxidant ranking (Senevirathne et al., 2019), carry a heavy dose of vitamin C, and supply the eye-protective carotenoids lutein and zeaxanthin flagged by the National Eye Institute. The University of Maryland / USDA density finding (4–40× mature vegetables) applies here too. They’re a real vegetable that happens to be delicious — and they come in armfuls, so you eat them by the handful, not the pinch.
Myth 6: “Homegrown greens are a safety gamble”
Microgreens are lower-risk than sprouts. Food-safety work from Penn State Extension, the University of Nevada–Reno, and the University of Arkansas points to the harvest method — cutting above the root line — as the key reason, alongside a clean US outbreak record for microgreens from 1998 to 2017. Rinse before eating; the structural risk is low.
