Arugula and mustard make the easiest schedule in the whole Level 1 lineup — no soaking, no weighted cover — but they come with one genuinely startling quirk that sends beginners into a panic on day one. Here’s what’s real.
Myth 1: “The clear jelly around the seeds is mold — start over”
This is the big one. The moment arugula seed gets wet, it wraps itself in a clear, gel-like coat (it’s called mucilage). First-time growers see it, assume mold or rot, and bin a perfectly good tray. It’s completely normal — many plants in this family do it, and it actually helps the seed hold moisture. The tell: mucilage is clear, glassy, and tight to the seed; mold is white, fuzzy, web-like, and spreads across surfaces. Learn that one distinction and the scariest moment of this grow disappears.
Myth 2: “You should soak the seeds first, like peas”
Do not soak arugula or mustard. Because of that gel coat, soaked seed turns into an unmanageable, clumping slime that’s almost impossible to sow evenly. These are dry-sow crops — and that’s part of why they’re the easiest, fastest schedule in the series. The thing that looks like a complication is actually what makes them simple.
Myth 3: “They’re way too spicy to eat much of”
The heat is real but it’s a seasoning heat — and that’s the intended use. You’re not meant to eat a bowl of straight mustard microgreens like lettuce; you use a pinch the way you’d use a condiment. On eggs, pizza, a sandwich, or a grain bowl, that sharpness is exactly the point. Arugula is milder and nuttier; mustard is the horseradish flash. Mix to taste.
Myth 4: “One tray, one crop”
This is a paired grow — both crops, one method, on one tray (or two small ones). They even harvest on a slight two-speed schedule: mustard is ready from around day six, arugula a day or so later. You get a built-in “condiment shelf” from a single sowing.
Myth 5: “The health claims are just brassica hype”
They’re grounded, with the usual honesty caveat. Arugula and mustard carry glucosinolates that convert to bioactive isothiocyanates (the same family chemistry Johns Hopkins studies in broccoli), arugula is a standout for vitamin K and dietary nitrate linked to blood-vessel function, and the University of Maryland / USDA density finding (4–40× mature plants) applies. That’s a well-documented nutrient profile — not a promise that seasoning your eggs cures anything.
Myth 6: “Homegrown is less safe than store-bought”
Microgreens are lower-risk than sprouts. Food-safety work from Penn State Extension, the University of Nevada–Reno, and the University of Arkansas ties this to harvesting above the root line and a clean US microgreen outbreak record (1998–2017) versus 50-plus for sprouts. Clean trays, clean hands, rinse before eating.
