Arugula and mustard are where microgreens stop being garnish and start being seasoning. Arugula concentrates the peppery, nutty bite of the grown-up salad green; mustard delivers a clean horseradish flash. A pinch does the work of a condiment — except it’s alive, you grew it, and it brings a real nutritional payload with the flavor.

The heat is the health story

Both crops belong to the Brassica family — the same group as broccoli and kale — and the flavor that makes them exciting is also where much of the benefit lives. Their pungency comes from glucosinolates, which convert (via the enzyme myrosinase, released when you chew or chop) into isothiocyanates — the bioactive compounds studied for anti-inflammatory, antioxidant, and liver-supporting “detoxification” activity.
